May felt like a really long month but at the same time, how is it June?! We certainly hope this finds you well? Here is a few of our monthly favourites for May. A collection of some of the things that have brought joy, comfort and support recently.
My garden has never looked as good as it does right now! I’m no gardener but I can buy plants, dig holes and plant things which is something I’ve really enjoyed doing with my daughter. Lockdown has provided the opportunity and time to plant and Mother Nature has provided the sunshine and rainwater to make things grow. I’m not alone with my new found garden joy, my friend has grown Sweetpeas which are now flowering and filling little vases at her home and my home! I still can’t keep house plants alive and am a million miles from growing my own food but the flowers growing in the garden are bringing pops of colour and joy. In other news, I have nailed how to make pork crackling! What I haven’t nailed is how to work it off mind, but I am happy to share the secret I have learned to gloriously crackled skin on a pork joint. The secret is boiling water.
Score the skin of your pork with criss crosses, boil up the kettle (full to capacity), place the pork joint on a trivet over your sink & pour the boiling hot water all over the pork. Dry thoroughly with paper towels. Massage the skin liberally with oil and sprinkle with salt. Roast it on high for the first 30 minutes of cooking time, turn the temperature down as per the cooking instructions for the remaining of the cooking time followed by a final 15 minutes more back on high and allow to rest. Then enjoy, apple sauce optional but recommended!
